The Global G4 Asian 7" Chef's Knife (71G4) has both balance and an amazing edge. The blade is made from CROMOVA 18 stainless steel which is ice-tempered and hardened to a Rockwell Hardness of 56-58, allowing it to resist rust, stains and corrosion while maintaining a razor sharp edge. Both sides of the blade are ground down like Western style blades, but instead of a bevel, it's ground to a point, which will allow that razor sharp edge to stay sharper longer. Global knives have a unique hollow handle filled with the right amount of sand to create the perfect balance. Combined with the nimble 7" length and the unique and smooth handle design, this will likely be the knife you reach for most often.
